Mean Green Monday | Recipies

After a long weekend I was so tired this morning and really didn't feel like working out today, especially I had a little bit of a carb load last night. I mean it was the Bronco's vs. Chief's game and there was pizza. I'm so glad that my Bronco's won! Okay now back to Monday - I was tired and totally not in the mood to eat healthy or workout. So guess what I did, I ate healthy & worked out. I had a couple bumps today but I still made it work. I keep Greek yogurt in the refrigerator at work so when I got there this morning to eat it and discovered that it had been eaten by someone else I was a little annoyed. So I dug through my purse and the rest of the food I brought to eat throughout my day. I decided on a Think Thin protein bar and a bottle of water. Since I had the protein bar, that meant my snack between lunch and dinner was now gone. I knew that there was some reason I kept a bag of a natural almonds in my desk. They were my saving grace. I was starving by the time I got home and started making one of may favorite veggies to pair with some chicken I had baked over the weekend.
 I made asparagus!! It's so good! Just writing this right now make me want to go pull out my leftovers and eat it! I've tried cooking it a couple different ways but this is my favorite. I wanted to post the recipe for you all so that you can try it. I like almost all kids of veggies and I have my favorite ways of preparing them. I hope you guys like it! I've been eating like this or almost 5 years and I still get excited to make it!


 

Take the bunch of asparagus and remove all packaging. Rinse thoroughly and chop off the bottom (about 1 inch to 1.5 inches) of each stalk. Then lay them spaced out on a flat 9X13 pan - I like to line my pans with foil to keep it from sticking and to make clean up a little easier. Next I drizzle light extra virgin olive oil and lightly sprinkle lemon pepper and mrs.dash over the asparagus then stick in the oven at 350 degrees. I like to cook mine a little long, so it just depends on how crunchy you like it. I bake mine for 30-35 minutes. Serve & enjoy!!
